Special K Meatloaf

Special K, onions, and pecans are the key ingredients in this ersatz meatloaf. I first tasted this dish in the home of my then-boyfriend’s hippy mother back in the 70’s. It is representative of the ovo-lacto category of vegetarian cooking, that was once so popular. It’s also surprisingly tasty.

Special K Meatloaf

Yield-about eight slices of “meatloaf” will serve 4-6.

  • 1 lb cottage cheese, large curd
  • 2 eggs, beaten
  • 2 and 1/2 cups Special K cereal
  • 1 finely chopped onion
  • ¼ cup chopped pecans
  • A cube of vegetable bouillion, crushed
  • ¼ cup melted butter


  1. Preheat oven to 325 degrees.
  2. Combine all ingredients until blended, but do not crush the cereal.
  3. Pour into an 8 by 8 inch baking dish.
  4. Bake at 325 degrees for 45 minutes covered and 30 minutes uncovered.
  5. Slice into 1inch slabs to serve.
