Mai Tai #1
(Adapted from Trader Vic, 1944)
2 oz Aged rum
1 oz Fresh lime Juice
1/2 oz Orgeat syrup
1/2 oz Triple sec / orange curacao
Garnish: Mint sprig

Pour all ingredients except the garnish into a cocktail shaker. Add ice and shake until chilled. Strain into an ice-filled (preferably crushed ice) snifter or Collins or Old-Fashioned glass. Garnish with mint. If using crushed ice, serve with a reusable straw.

1 1/2 oz Dark rum
1 oz Medium-bodied rum
3/4 oz Fresh lime juice
1 oz Grapefruit juice
1/4 oz Falernum
1/2 oz Triple sec
2 dashes Angostura bitters
1 dash Pernod
Garnish: Mint sprig
Pour all the ingredients except the garnish into a cocktail shaker. Add cracked ice and shake until chilled. Pour without straining into a double old-fashioned glass. Garnish with mint sprig.
